How to make  Masons Arms Game Pie

Masons Arms Game Pie

When Dave found himself stranded in Witherslack woods, and was hungry, he managed to whip this up, no probs.

Preparation Time: 15-20 mins

Cooking Time: 2.5-3 hours

Serves: 6-8 people

Utensils list:
Sharp knife
Measuring jug
Frying pan
Big pan
Pie dish/dishes

Secret ingredients list:
1 kg diced mixed game
1 finely chopped onion
250ml red wine
1 litre of fresh game/beef stock
1 bouquet garni
Star Anise
Sprinkling of juniper berries
Salt & pepper
Puff pastry for topping

How it’s done…
  1. Fry game in 2 tablespoons of oil until sealed, add the onion, juniper berries, star anise & bouquet garni and continue to fry for 2-3 minutes.
  2. Add wine and reduce liquid to half, then add stock, cover and place in a pre-heated oven at 170 degrees cent. Leave for 2.5 - 3 hours until meat is tender. Thicken gravy if required with 1 tsp cornflour and 2 tbsp water mixed.
  3. Adjust seasoning to taste and transfer to either individual pie dishes or one large dish if preferred.
  4. Roll out pastry and cover the dish/es, trim excess and brush with beaten egg. Return to the oven and bake until pastry is risen and golden brown.
  5. Serve with plenty of buttery mash and freshly steamed greens!
  6. The puff pastry is a real secret!!!
