How to make  Borrowdale Tea Bread

Borrowdale Tea Bread

From: Low Sizergh Barn, Sizergh

This recipe is a Low Sizergh Barn secret we sell this in the tea room and the farm shop, along with our organic eggs and homemade produce.

Serves: Makes one large loaf

Ingredients:
235 ml Strong Tea (use 1 tea bag)
25g Butter
300g Dried Mixed Fruit
1 Egg
150g Stone ground Flour
35g Self Raising Flour
115g Soft Light Brown Sugar

How it’s done…
  1. Soak the fruit overnight in the tea.
  2. Put soaked fruit, flour, sugar and butter in a large mixing bowl and beat well, add more tea if too dry. Add eggs and mix well.
  3. Divide mixture between 6 lined tins, bake 1.5 hours at 180°C until firm to touch and skewer comes out clean.
